چکیده

in order to study fruit  quality changes in apple cultivar gala, related to ripening stage and storage time, an experiment was conducted in a split plot arrangement in randomized complete block design with four replicationsin the area of damavand– jaban for three years. five levels of sampling times in storage were assigned to main plots, and three levels of harvesting times were randomized in sub plots. flowering time was recorded for six selected trees. fruit was harvested during ripening process, every week, based on the starch index (1-5). the samples were tested for total soluble solids content (tss), titratable acidity (ta), weight decrease, fruit firmness, flavor and acceptability. harvested fruits were stored in storage under 0 ± 1°c  temperature and 85 ± 5% relative humidity, for five months. the optimal fruit quality was achieved when the fruits harvested in 110 days after full-blooming with 2.0-2.5 starch index.

Quality changes in sapote mamey fruit during ripening and storage

Physical and chemical changes in sapote mamey (Pouteria sapota (Jacq.) H.E. Moore and Stearn) fruit during ripening and storage at various temperatures were evaluated. Ripening was associated with flesh softening, an increase in soluble solids content (SSC), and a change in flesh color from yellow or pale pink to a dark pink or red. No changes in fruit skin color or in flesh acidity were observ...

Quality Changes in Fresh-cut Pear Slices as Affected by Cultivar, Ripeness Stage, Fruit Size, and Storage Regime

Fresh-cut fruit slices prepared from partially ripened Bartlett pears had longer shelf life than those from Bosc, Anjou, and Red Anjou pears. Pear fruit ripeness, based on flesh firmness of 44 to 58 N, is optimal for fresh-cut pear slice processing. Pear slices derived from smaller size fruit (122 to 135 g) have greater cut surface discoloration and deteriorate more rapidly than slices derived ...

Effects of Harvest Date on Apple Fruit Quality at Harvesting and after Cold Storage

Different dates for apples fruit harvest (Malus domestica Borkh. Cv. Fuji) were studied to determine physiochemical changes during the storage. Fuji apples were harvested from 9 September till 23 October, at five different times and stored at 0±0.5 °C and 95% relative humidity for 120 days. To determine the best harvest date for maximum quality and storability, physical and chemical paramet...

Cultivar and fruit size influence bruise susceptibility and some physical properties of apple fruit

ABSTRACT- For most fruit types, including apples, bruising is the most common type of postharvest mechanical injury. Bruise susceptibility was investigated in 3 commercial cultivars (‘JazzTM’, ‘Granny Smith’ and ‘Fuji’) and among a range of 4 different fruit sizes (commercial counts of 135, 120, 100, and 88) in each cultivar. Bruising was carried out by dropping a uniform round steel ball (110g...

Physiological Impacts of Fruit Ripening and Storage Conditions on Aroma Volatile Formation in Apple and Strawberry Fruit: A Review

After a brief description of the ‘‘history of research’’ of aroma volatiles of apple and strawberry fruit, possible reasons for the reduced production of these important quality attributes by particular preand postharvest procedures are given. Among the possible physiological factors in association with reduced aroma volatile production, a reduced ethylene sensitivity, a decline in the rate of ...

Ultrastructural changes in the cell walls of ripening apple and pear fruit.

Ultrastructural changes in the cell walls of "Calville de San Sauveur" apples (Malus sylvestris Mill) and "Spadona" pear (Pyrus communis L.) fruit were followed during ripening. In apple, structural alterations in cell walls became apparent at advanced stages of softening and showed predominantly dissolution of the middle lamella. In pears softening was also associated with the dissolution of t...
